Rinse quinoa under cold water using a fine mesh strainer.

In a pot, bring water or broth to a boil, add quinoa, reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed.

Remove from heat, fluff with a fork, and let cool to room temperature.

While quinoa cools, prepare vegetables: dice cucumber, halve tomatoes, chop onion, slice olives, and chop herbs.
